Restaurant Cheddar Bacon Burgers at Home

2 tablespoons melted butter
2 tablespoons sesame seeds
1 tablespoon coarse sea salt
Burgers
1 pound ground beef (chuck preferred)
2 medium yellow onions
Trader Joe's Cheddar Bacon Cheese block
4 tablespoons unsalted butter, melted
2 tablespoons olive oil
Neutral Oil (I prefer avocado)
Salt
Pepper
Instructions
I made my own buns but if you are buying buns, I recommend Martin's potato buns.
Follow King Arthur recipe for buns (if you're feeling motivated) and once buns are out of the oven, brush with butter and top with sesame seeds and salt. Set aside.
Prep: Separate ground beef into 4 equal sized balls and let come to room temperature. Cut onions into 1/4 inch slices. Thinly slice cheese into 12-15 slices.
Cook: Heat a large nonstick pan on medium heat and add the butter & olive oil. Once butter is melted and bubbly, add your sliced onions. Cook for 30-45 minutes, stirring occasionally. Onions will be a caramel brown color once done.
Heat a 10-inch cast iron skillet on medium high heat and add enough neutral oil to coat the bottom of the pan. Once the oil is hot (you will see smoke evaporating) add two of your ground beef balls and using two large spatulas, smash both balls until they are round patties. Salt and pepper the patties. Let brown for 5-6 minutes without touching. Flip patties and season the browned side. Add 3-4 cheese slices and let cook for another 5-6 minutes. Remove from heat and place onto a rack to rest for 10 minutes. Repeat with the last two balls of ground beef.
Using a serrated knife, cut your buns in half. Place the burger patties and then the onions. Use the condiment of your choice.
